The purpose of the role is to the Breakfast and Larder section of the kitchen in a planned programme of practical skills learning. Identifying development at every opportunity to realise a position of Chef de partie. The key tasks will include:

Working in a buddy environment, in breakfast and larder operations. Preparation and serving food to restaurant, lounge, conference and banqueting guests. Focusing on breakfast service 3 days a week and supporting the larder for 2 days aspiring to a rosette standard.

Further Information:

James Penn has been head chef at the Hydro Hotel for the past 8 years. James has a passion for training and developing his brigade, during 2017 we have ambitious plans for realising a rosette and our Crystal restaurant and building our banqueting business for the hotel. Recent investment into the kitchen has seen a 2nd sous chef appointed and a new Rational finishing system totally 16k which will allow the brigade to realise their goals. This is an exciting time for the Hydro hotel with hotel investment this year realising 380k as we continue to ensure we are a leading hotel in Eastbourne. The successful applicant will receive hands on training from James and the section leaders to ensure full support at all times within this busy kitchen which generates in excess of 1.7 million pounds of revenue each year.
